Refreshing Grewia Asiatica/ Falsay Juice

Grewia Asiatica popularly known as Falsay in Asia. They are small berries that taste sweet and sour at the same time. The squash is prepared from its pulp as it acts as a cooling agent during summers. They are rich in vitamin C, calcium and if consumed regularly during the summers it can protect you from hot weather related health problems. I usually eat this small purple fruit by sprinkling a dash of coarse salt during hot and sticky June afternoons, it purifies blood and reduces my digestive problems.

Well, living in a Asian country we enjoy all sorts of fresh fruits, unique beverages and delicious street foods. Grewia Asiatica or Falsay was one of those treats here. I actually searched its recipe but couldn't find one. Just last week, I found out my aunt makes this all the time! So, thanks to my aunt, you too can prepare this sweet and tangy Grewia Asiatica juice in summers at home!



This makes a large amount and it is great for your backyard parties. I am a berry lover so this juice is an added bonus for me. It is made with clean and light ingredients and you can definitely include this drink in your water diet plan! I usually freeze it in the summer for an awesome berry Popsicle for my niece and nephew.

I did this with water instead of using soda or sprite to give you a healthier option and it just tasted as good as the soda version. 

Refreshing Grewia Asiatica Juice

Refreshing Grewia Asiatica Falsay Juice Recipe
Preparation Time: 10 minutes
Serves: 2-3 persons

Ingredients
Grewia Asiatica Falsay

1 cup washed Grewia Asiatica or Falsay
3-4 tablespoons Sugar or Honey, any option available to you
2 cups Water
1/2 teaspoon Black Salt  
1/2 cup Ice cubes

Method:
  • In a blender, add 2 cups of water and 3 tablespoons of honey. Blend for a few seconds. Now add falsay and 1/2 cup ice cubes and blend together into a smooth and thin consistency.
  • Add black salt or salt to taste and adjust the spice and sweetness as desired. Pour it in a bowl passing through the strainer and throw away the fibrous leftover from the strainer. 
  • Remove the juice in a jar and refrigerate. Pour it in a serving glass. Serve chilled.
Drink up and Enjoy!

Pan Fried Chicken With Rich & Creamy Sauce/ Malai Chicken Boti Recipe

This recipe reminds me of summers in Mumbai, when our schools would close, mama and I would take the coach to Ahmadabad to spend time with my nana and nanny. Where my nanny would prepare meals, presenting large platters of fragrant methi malai matar,  stuffed eggplant masala, chapatis hot from the griddle, fresh green salads, drinks included chilled buttermilk and orange juice with sweet moramba. After lunch family would retire to the nanny's bedroom for cups of tea and conversations. Tales from my mama's wedding and embarrassing details of our childhood was recounted!


Coming from a veg family, mama would make malai paneer or malai/cream kofta where cottage cheese or panner was made at home by curdling boiled milk. Cottage cheese would be a token vegetable dish, usually malai paneer. Malai paneer would be soft and creamy bite size paneer serve hot with naan or vegetable pulav. This was the most delicious thing to be had at home.

After my marriage, I got introduced to a non-veg style of malai chicken and this dish had a different charm. They were same bite size, soft, tender and delicate, it blended perfectly well with hot parathas, mint and tamarind chutney and onion salad. The opportunity to learn how to make malai boti chicken or creamy chicken cubes presented itself from my loving aunt when we had her over for a tea. My aunt has a specialty of cooking chicken in cream and nuts. I have adapted some of her cooking tips in this recipe to add a creamy and spicy taste in chicken.

This recipe is a lovely combination of greens and whites, I mean green chilies and cream with easily available spices. This is my first recipe on the blog, where I have completely ignored using red chilies in my dish. Like always, I have noted down my mama's veg malai paneer recipe and my aunt's malai chicken recipe, and I have combined the two classics into one tasty treat.

This chicken meal is instant, easy, juicy, flavorful and an obsessed recipe! Simply grab a chicken breast and cut them into cubes, marinate it with fresh coriander leaves, green chilies paste and spices, fry them or BBQ them and enjoy its tender and delicious taste. The longer you marinate the better are the results.

I served these with paratha's, onion salad, tamarind and yogurt chutney.

Pan Fried Chicken With Rich & Creamy Sauce/ Malai Chicken Boti Recipe       

Pan Fried Chicken In Cream Sauce Malai Chicken Boti Food Recipe

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Total Time: 50 minutes
Serves: 2-3 persons

Ingredients:
12-14 boneless chicken pieces
1 teaspoon cumin powder
1/2 teaspoon garam masala powder or all-spice powder
1/2 teaspoon black pepper powder
1 tablespoon ginger paste
1 tablespoon garlic paste
2 teaspoons green chili paste
1/4 teaspoon tenderizer 
4 tablespoons cream
2 tablespoons yogurt
2-3 tablespoons chopped coriander leaves
1 tablespoon vinegar
1 teaspoon cornflour
1/2 cup cheddar cheese, optional
Salt to taste

Method: 
Pan Fried Creamy Chicken, Malai Chicken Boti
  • In a bowl, Cut chicken breast into cubes and place them in a shallow dish. Now, combine 1 teaspoon cumin powder, 1/2 teaspoon garam masala powder, 1/2 teaspoon black pepper powder, 1 tablespoon ginger paste, 1 tablespoon garlic paste, 2 teaspoons green chili paste, 1/4 teaspoon meat tenderizer, 2-3 tablespoons chopped coriander leaves, 1 tablespoon vinegar, 1 teaspoon cornflour and salt to taste. Mix properly so that all the spices penetrates into the chicken pieces during the marination process.
  • Now add 4 tablespoons cream and 2 tablespoons yogurt. Mix and marinate chicken overnight or 2-3 hours. 
  • You can adjust green chilies if you're doing it for your kids.
  • In a pan, heat cooking oil and cook marinated chicken pieces on a medium flame until chicken pieces are tender and cooked evenly from all sides.
  • You can even skew it on skewers and BBQ chicken pieces to add smoky flavor to it.
  • Garnish with cheddar cheese and Serve hot with paratha's or roti's and a big bowl of salads. I personally prefer creamy chicken with noodles or pasta and it just blends perfectly! Hope you enjoy!
You can even freeze the marinated chicken mixture for 1-2 days for a quick weekend dinner. If you're planning to marinate it for more than a day, then skip adding meat or chicken tenderizer!

Summer Special!! Watermelon Juice Recipe

It's time to cool down our body to an extent so that we can beat the heat. Nothing can be better than fresh seasonal fruits!. I always try to consume light meals during summers as this hot sunny day kills my mood. A large bowl of fresh salads or grilled fish is always welcome. But a meal is not considered complete until and unless we don't treat ourselves with a glass of fresh fruit juice. My husband has a good habit of drinking fresh juices every day just an hour before dinner. As according to him, If we eat or drink fruit or fruit juices after a meal, it is not rated as a healthy habit. 

Every day we drink different types of smoothie or juices so that we keep our body hydrated. During summers, I always hate chewing fruits or salads maybe because this weather triggers my appetite. So basically, my body is quite happy with fresh fruit juices now a days.


Watermelon is the only perfect hydrating fruit that we have been blessed by nature during summers! Today, I will be sharing with you quite an easy and interesting recipe of watermelon juice that even newbies can try to serve and impress guests or friends! This recipe is an old family recipe that I make during our family get to gathers on every Friday. My friends are so impressed by healthy and yummy taste of watermelon juice that even they try to do this every week. 

Since childhood, summer has always bothered me and hence I tend to lose a lot of weight as I always eat less and drink more, but my skin have always been benefited with glowing and fresh results as this watermelon recipe is packed with milk, honey and watermelon of course!

Summer Special!! Watermelon Juice

Watermelon Juice Recipe, Drink

Preparation Time: 15 minutes
Serves: 2 persons

Ingredients:
1 big bowl of watermelon chunks
1 cup crushed ice
1-2 cups full cream milk
1 tablespoon of honey
2-3 tablespoons of any red color syrup, I have used 3 tablespoons of roohafza

Method:
  • In a blender, add 1 big bowl of watermelon chunks, and 1-2 cups full cream milk. Blend well until it turns into a smooth consistency.
  • Now add 1 tablespoon of honey and crushed ice or ice cubes. You can also add 1/2 cup cream for thick and creamy consistency. I prefer the lighter version of watermelon juice so I have skipped adding cream into it. 
  • Add 2-3 tablespoons of roohafza or any red color of juice syrup available to you. Blend and pour it in a glass. Garnish with watermelon chunks, and Serve chilled. Add vodka to taste, if desired.
I feel light, relaxed and in a happy mood after drinking this sweet and cooling juice. I hope you too feel the same!

Yummy Mango Milkshake Recipe

My family waits every year for this yellowish pulpy fruit. Mangoes are considered as the king of fruits and yes! It's truly a fruit that wins my family heart either ripe or unripe!. In our Gujarati culture, we try to prepare different types of delicious and freezer friendly ranges from the pickle, side-dish to juices. Mama always makes a sweet and spicy version of the pickle every year so that we can enjoy eating vegetables with pickles during rains. I remember, whenever she used to make pickles and moramba out of raw mangoes, my sister used to grab few pieces of chopped and grated raw mangoes and she enjoyed eating them by just sprinkling gentle amount of salt and chili powder. Believe me, every bite of raw mango will turn hot summers into a fun day. 

I usually prefer eating mangoes where nobody is around but just me. I never peel and chop mangoes, all I do is give a gentle squeeze on each side of mangoes and make a small hole on the top notch of it and enjoy sucking the soft and yummy pulp. Mangoes brings my childhood days back! I always end up spoiling my clothes, fingers and sometimes face with its pulp. 

We have an old Indian tradition of gifting mangoes to our relatives and neighbors as the mango season is considered as a festival in our culture. It feels great when we also receive lots of Alphonso mangoes from my nanny's farm. Now a days, I'm busy freezing mango pulps in plastic bottles so that I can enjoy them later while they are not available in markets. 



My personal favorite mango recipe is mango milkshake. It is easy to make, healthy because of the addition of milk and cream and importantly tummy filling for people like me who could eat a horse!

Today, I will be sharing with you my husband's recipe where you do not have to struggle for lots of ingredients. Keep it simple and enjoy this milkshake every morning so that you stay energetic throughout your busy working day.

Mango Milkshake

Hearty Mango Milkshake Drink Reciipr
Preparation Time: 10 minutes
Serves: 2 persons

Ingredients:
3 fresh ripe Mangoes
1 cup full cream milk
3-4 tablespoons of cream
1 tablespoon of honey
Few ice cubes 

Method:
  • Peel the skin of mangoes with the help of a knife or peeler and cut them into cubes. I have used Alphonso mangoes, you can use any type of ripe mangoes available.
  • In a juicer, add chopped mango pieces, 1 cup full cream milk, 3 tablespoons of cream. Add little water if needed. Blend until the consistency turns smooth and thick.
  • Add 1 tablespoon of honey and a few ice cubes and blend well. Adjust the sweetness as desired. We always prefer using honey as a sweetener as it is considered healthier than sugar.
  • Pour immediately into the serving glass, and serve chilled. You can also garnish with a scoop of vanilla or mango flavored ice-cream. 
I usually add tutti frutti and chopped dry fruits whenever I make it for my nephews as they are too fussy for fruits and milk. This can be the best way of hiding all the nutrition in one glass!
