Its Ramadan and
most of us are busy in treating our families with different delicacies. As we
are a family of two, it gets really difficult to decide and cook. Particularly
because Hashim leans towards pakistani desi tadka and I fancy Indian-gujju
food. From Sehri to Iftari I am on my toes planning and cooking something
unique, exciting and soothing at the same time. In fried food, I prefer
freezer-friendly recipes, I basically make keema samosas, wontons, spring
rolls, chicken donuts, bihari kebabs, and of course cheesy peri peri bites and
store them in advance of Ramadan in deep freezer. It saves time, energy and
gives some sort of relief in this hot summer. Once all set frozen, it's super
easy to fry them in batches each day in Sehri or Iftar. Apart from this, my
likings for Pakodas and chocolate filled brownies too give regular appearance
on our iftar table. After hogging a lot of yummy delights, all I look is for a hot
cuppa ginger tea and a serene environment to relax my mood. Seeing me working
all day long, Hashim decided to give me a break from cooking chaos and surprise
me with something amazing.
So guys! Today I’m sharing one of the special
recipes of my husband and believe me! If you follow it from scratch to end you
will be amazed with its output. He surprised me with this delicious Italian
recipe that just blew my mind. It's cheesy, spicy, and bang on flavors. He makes
awesome strong ginger tea and now this! OMG…what's next? Am wondering.
Red Sauce Cheesy Pasta
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Total Time: 20 minutes
Serves: 2 persons
Ingredients:
1 bowl boiled pasta, any shape – my personal
favorite is shells one
2 tablespoons cooking oil
½ teaspoon ginger paste
1 large, peeled and diced tomatoes
1 small, peeled and moon-sliced onions
1 small, moon-sliced capsicum
2 tablespoons red pepper powder, spice as
required
1 teaspoon red chili flakes
1 teaspoon black pepper powder
Salt as per taste
A pinch of oregano
2-3 tablespoons tomato ketchup
A lot of grated cheese
Method:
- In a pot, boil water with salt and simply add pasta for boiling process. Once they turn soft and silky drain the water and transfer all of it into the plate.
- In a pan, add cooking oil, once heated add sliced onions and allow it to turn translucent, afterwards add peeled and finely chopped tomatoes and ginger-garlic paste. Allow it to turn mushy on a medium to low flame.
- Once it turns in a nice and thick tomato puree, add green bell pepper and cook it for a minute. Now add red chili powder, red chili flakes, salt and 2-3 spoonful of tomato ketchup. Mix it well.
- As soon as the cooking oil releases from the sides, add boiled pasta and mix everything properly, add grated cheese and mix again.
- Remove it on a serving plate and garnish with oregano and grated cheese and serve hot. Enjoy!
