Oil-Free, Instant Spongy Dosa

Making dosa with only two ingredients is the easiest and the quickest way, eliminating the need to soak, grind and ferment overnight. This is a perfect summer recipe made with semolina and curd for a scrumptious dinner and a great addition to your breakfast table. You can also revamp it by adding mashed seasoned potatoes to the center of each dosa.

You will be amazed at how easy it is to make with perfect results. The secret to this is unflavored Eno during the last stage of the procedure, it gives the same look and taste as the long hours of the fermented type of masala dosa. If you are having dosa for breakfast, make it a little lighter by pairing it with coconut mint chutney otherwise serve with some potatoes masala, coconut chutney, or sambhar on the side. These are the best tasting, light, low-fat, and fluffy savory food which will leave you feeling full and satisfied. Another dosa recipe I make again and again is this yummy trio dosa, so good! Any slight changes in the recipe you make can yield a different result, so I suggest you make it exactly the same way as written.

Instant Dosa

Preparation Time: 10 minutes

Cooking Time: 2 minutes

Total Time: 12 minutes

Serves: 2-3 persons

Ingredients:

1 cup semolina

½ cup curd

¼ glass water

½ teaspoon salt

¼ teaspoon sugar

1 sacket Eno, regular one

Method:

  • In a blender, add 1 cup semolina, and ½ cup curd with ¼ glass of water. Blend to a smooth and thick paste.
  • Remove the batter to a wide bowl, add ½ teaspoon salt with ¼ teaspoon sugar, and mix. Cover with a lid and allow it to rest for 5 minutes.
  • Afterward, add eno and whisk continuously in the clockwise direction.
  • Heat a non-stick pan on a medium flame, pour a ladle full of semolina batter, and allow it to spread on its own.
  • Cook undisturbed on low to medium heat, you can also cover the pan with a lid until the upper layer of dosa is completely cooked.
  • As soon as the bottom layer of dosa turns light brown, then fold the dosa with the help of a spatula and remove it to a plate. Repeat the same procedure with the remaining batter. Serve hot with coconut chutney and potato masala filling. Enjoy!
