You’ll often find me wishing that lockdown would hurry itself up and come to an end, despite I know that the new days does not mean a neat and virus-free start. What interested me most this year though, was the ordinary, because if I see the positive frame – it is full of love, and change. I have enjoyed somewhat the slower pace and quieter moment of the last few weeks. A particularly late night walks with hashim that good thing happened this time. If there is one binary that holds is good and the evil as its a constant dance. Steinbeck enlightenment was well put - all the goodness and the heroism will rise up again, then be cut down again and rise up. It isn’t that the evil thing wins — it never will — but that it doesn’t die. In 2020, I would like good to rise again and again. For me, it’s the hope, to be alive to it in the everyday stories of our lives.

For Hashim a simpler motto holds sway and that's to “keep calm and carry on”. So once a week, I’m given time off from cooking. Thanks to quarantine days that Hashim has got into the habit of wearing toque blanche occasionally. Last time, he surprised me with italiano cooking and now it’s this cheesy slider. Definitely, we argue so much when he is messing around in the kitchen because cleaning the counter takes hell out of time. This is the second most delicious recipe in the simplest form possible, especially for the husbands out there who always wonder to cook something for their loved ones, but the thought “cooking is time consuming” holds them back. Try this not so difficult recipe and treat yourself during these tough times.

Buffalo Chicken Sliders

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Total Time: 35 minutes
Serves: Depends

Ingredients:
4 soft buns, He took ready-made ones because it's easy!
1 cup shredded chicken
1/2 cup red hot sauce
1 tablespoon butter, melted form
1 cup shredded mozzarella cheese
A few leaves of lettuce, that’s completely optional

Directions:
  • In a bowl, mix together shredded chicken and red hot sauce until the chicken gets completely painted with sauce.
  • Top each bottom of slider bun with 1 tablespoon of shredded mozzarella cheese, you can put more if you like. Spreading the cheese first will not allow the bottoms from getting soggy.
  • Next, spread 2-3 tablespoons of the prepared buffalo chicken mixture to each slider bun.
  • Spread the lettuce leaves and finally place the tops on each slider bun.
  • Gently brush melted butter over the buns and bake for 10-15 minutes until cheese is melted and top of buns are toasted well.
  • Serve hot with French fries or a big bowl of salad. Pure goodness!
