Barbecue Meat Delights

Barbecuing meat, chicken or fish can certainly not go wrong for the most part when you are running out of some ingredients. Gathering all the spices into the thick yogurt and whisking it for a perfect creamy blend is all this recipe needs. There are days when I am completely busy and don’t have enough hours to cook two separate main dishes for two of us. One dish is obviously delicious aromatic non veg cuisine for him while another is a healthy version of veggies for me and of course a side kick dish for him.

During these kind of days, I run straight to my favorite side of kitchen and that’s the lifesaving freezer portion where all my freezer friendly goodies are well preserved in its pristine state possible. I am going to share a feasting and less complicated recipe where meat cubes are nicely bathed in spices with a gentle smoky finish. The leftovers are used in making cheesy, meaty buns for next day breakfast and it will not disappoint you a bit. If not this, what else??

The heavily coated meat with a squish of lemon juice all over it along with a crunch of fresh salad to balance its heat and a nice dip of tamarind sauce, stuffed tightly in a small piece of warm paratha will always be a moment to live for every non-veg hogger. If you haven’t tried this satisfying meal and if it’s not in your reach, then this is the time to witness the taste of ever amazing meat surprise. That too in your own comfort zone, healthy way and at your home – control the spice meter and enjoy this recipe at its best.

BBQ Meat Delights

Preparation Time: 5 minutes

Cooking Time: 30 minutes

Total Time: 35 minutes

Serves: 2-3 persons

Ingredients:

500 grams’ mutton, boneless

4 tablespoons cooking oil

2 tablespoons butter, melted

1 tablespoon garlic paste

1 tablespoon ginger paste

2 tablespoon meat tenderizer or 1 tablespoon raw papaya paste

½ cup thick yogurt

½ teaspoon turmeric powder

2 tablespoons red chili powder

½ tablespoon cumin powder

½ teaspoon garam masala powder

1 tablespoon roasted and roughly crushed coriander seeds

1 lemon

Salt to taste

Recipe:

  • In a bowl, add meat and simply mix 3 tablespoons cooking oil, ginger and garlic paste, lemon juice, 2 tablespoons meat tenderizer, 2 tablespoons red chili powder, ½ teaspoon turmeric powder, ½ teaspoon garam masala powder, 1 tablespoon roasted and roughly crushed coriander seeds, ½ tablespoon cumin powder and 1/3 teaspoon salt. Mix all the spices for ½ a minute and add ½ cup yogurt. Mix so well that all the spices get well mingled into the meat cubes.
  • Leave it for 6 hours marination. If you want to soak the meat overnight - skip the step of adding meat tenderizer. Add tenderizer just 4 hours before pan frying.
  • Take bamboo skewers and fix meat pieces. In a frying pan, add 1 tablespoon cooking oil and 2 tablespoons of melted butter.
  • Butter enhances its flavor and gives a nice touch to the overall taste. Place the skewers one by one and allow it to cook covered on a low-medium flame.
  • Change the sides after 10 minutes and leave it covered.
  • When the meat is nicely tendered, give smoke by placing hot charcoal in the center of the bites and pouring a few drops of ghee over the hot charcoal piece. Immediately cover with a lid and leave it aside for 5 minutes or so.
  • Enjoy plain meat bites or with chapatti, mint sauce or tamarind sauce. Mind blowing combination for sure!
