Breakfast diaries - Yum Yum Old-Fashioned Doughnuts

This and chicken bread was our conclusion for our sunday breakfast. The husband and I have had several weeks of relentless work and entertainment. So it was with much joy that we had a slowdown weekend. Golden hour: The bright sun woke us early, we headed to brisk walking following with our yoga regime. Hashim craved for little cookie or a moderate piece of donut so I went straight to my kitchen and prepared these chocolate glazed donuts after all what counts is how you start your day.  It is one of Hashimz favorites, consistently delicious with excellent services *ofcourse. It is very simple to make and delicious way to start your day. The lamination on it is a pure art and we washed it down with latte which made it more alive and of course our last episode of Supernatural. We have held this season for so long, mainly because we didn’t wanted to be a part of the show’s shutter down. Throughout the episode, I was wondering where did the dog go! Also the finale was very much truncated without the existence of Crawly and his epic dialogue – “Hello Boys”, wherein the boys had a terrific ending. Despite all of this, GoT last scene similar iteration made easy for us to get the hang of the loose ends.

Doughnut Warning! They are oh so good, complete mood changer and hard to stop eating. It’s easy and this is one of those recipes you’ll be making again and again and the top of it – all the ingredients are in your kitchen! Can be easily doubled for more people and they are great homemade holiday goodies for your loved ones.

Yum Yum Old-Fashioned Doughnuts

 Preparation Time: 2 hours 40 minutes

Cooking Time: 30 minutes

Total Time: 3 hours 10 minutes

Serves: Depends

Ingredients:

1 cup all purpose flour

30 ml milk, lukewarm

30 ml water, lukewarm

1 ½ tablespoon caster sugar

1 ½ tablespoon powdered milk

1 egg, room temperature – we will use only half portion of beaten egg

1 ½ tablespoon melted butter, unsalted

1 teaspoon yeast

A pinch of Salt

Method:

  • In a cup, combine lukewarm water and milk, mix it well and leave the mixture aside.
  • In a deep bowl, add 1 cup all-purpose flour, 1 ½ tablespoon caster sugar, 1 ½ tablespoon milk powder, a pinch of salt, 1 ½ tablespoon melted butter and 1 teaspoon yeast. Mix well and add ½ beaten egg. Mix again until well combined.
  • Knead Process: Slowly, add the mixture into the bowl and knead the dough into soft texture. Tip – while kneading the dough add milk and water mixture little by little and analyze the addition of mixture accordingly – if you add the mixture all in once, you may end up by making the dough extra gooey in texture.
  • Repeat kneading the dough until it becomes elastic and slightly glossy all around. Later, on your counter top – dust some all-purpose flour and place this dough over it.
  • Knead the dough again for another 5 minutes, this will guarantee that the doughnuts will come out soft and yummy.  Grease a bowl with oil, place the dough into it, cover it up and leave it in a warm spot to rise for an hour or so.
  • After an Hour: Remove the dough and knock back it like before for least 2 minutes, leave it aside uncovered for another 10 minutes.
  • After 10 minutes: On counter top, dust flour and with the help of rolling pin – roll out into ½ inch of thickness. With the help of doughnut cutter, simply make perfect shapes and leave it aside on a dusted tray covered, about 15 minutes or more.
  • After 15 minutes: In a frying pan, heat cooking oil on a low heat, check its temperature by simply putting a tiny piece of the hole and if it rises slowly on the topmost layer of oil along with some bubbles around – it's the perfect time to fry.
  • Allow the donuts to fry on a low heat, always place least quantity of donuts in pan for best results.
  • As soon as they catch light brown color on each side, remove them gently and place them on absorbent paper.

Chocolate Glaze Method:

½ cup icing sugar

1 ½ tablespoon cocoa powder

1 tablespoon milk

A drop or two of Vanilla essence

Method:

  • In a medium bowl, bring together icing sugar and cocoa powder. Add a few drops of vanilla essence and mix well. If the consistency isn’t thick yet – add milk, else – if it’s too liquid simply add a little bit of icing sugar – otherwise dip any side of fried doughnut one by one. Promptly top with sprinkles or chocolate chips. Enjoy the same day!
