Mango Treat - Aam Ras | Keri No Ras

Aam Ras substantially means mango loaded treat and whenever I think of this fruit I always gainsay with two things. In Hindi, Aam the word itself means “like ordinary”, and on the contrary Mangoes are also said to be the King of fruits. Secondly, I ween that every fruit is a King as it holds its own goodness and splendid taste. Fruits attract me through its vibrant color, soothing smell and of course its mind blowing taste. I like better to chew fruits instead of blending them so that I can relish its unique taste in every bite. Forbye chewing chunks of fruit means adding fiber, which is ultimately more beneficial than ever. But, there is no harm in getting a kick of it in the form of smoothie, juices or simply as a fruit yogurt.

During this time of the year, raw or ripe mangoes bring in with the spirit of celebration. We try to hog them in the form of curry, mango rice, pickle, sweet moramba, drinks and anything possible. Pickle is basically the savory formula served with any veg or lentils curry, to bring extra effect to the platter. Raw mangoes are chopped, rolled in spices and soaked in the abundance level of oil for prolonged shelf life. It’s stored in such a way so that we can enjoy its deliciousness throughout the year. Apart from this, I cannot deny the fact that no Mango recipe can beat the combination of Aam Ras and Puri. This recipe has its separate fan base. It’s simple, elegant and above all it gives so much satisfaction. Puri is a crispy version of light weighted Indian flat bread, made up of semolina and all-purpose flour, deep fried for the golden look and beautiful texture. I had served Aam Ras with Chole Bhature and Hashim loved the veg platter. It’s always a hit recipe in our house and the endless bowls of Aam Ras keeps on repeating. Mango Treat - Aam Ras | Keri No Ras


Preparation Time: 5-8 minutes

Cooking Time: 0 minutes

Serves: Depends


Ingredients:

4-5 Mangoes, soaked well in chilled water – for cooling effect

½ teaspoon cardamom powder

A pinch of saffron threads

2 tablespoons of jaggery, grated form

A pinch of ginger powder, optional – this one is the Gujarati version of Aamras so adding ginger powder makes it more authentic in taste – whereas Maharashtrians prefer the addition of cardamom powder instead of ginger.

1 bowl ice cubes

2 tablespoons of chopped almonds and cashews


Method:

  • Wash and peel mangoes, chop nicely and put in a blender along with jaggery and ice cubes and blend until smooth texture.
  • Transfer the mixture to a bowl, and add cardamom powder, saffron, ginger powder and chopped dry fruits if you like. Mix well and garnish with chopped almonds and cashews. Serve chilled with hot puris or Indian flat bread.
  • You can also garnish with pistachio followed by mini mango cubes. Enjoy.
